Today, Italy is one of the world's leading cheese producers, and boasts a venerable tradition of cheesemaking that predates the days of the Roman Empire.

Italy is home to a wide range of styles and flavors of cheese. Parmigiano-Reggiano, Pecorino Romano, Gorgonzola, Mozzarella, Provolone, Ricotta and Taleggio are just a few many recognize.

In our class on Italian Cheeses, we will provide a tasting tour of all the major cheese-producing regions of Italy, highlighting the regional characteristics and culture of the region.

Join us for a guided tour through the French countryside exploring a variety of tastes and textures — from mild and tender, to creamy and tangy, to hard as a rock and sharp as a razor.  

We will discuss the interplay between natural conditions of  the soil, climate and vegetation and the effect it has on the traditional artisan cheese that is produced.
