Raw milk can be the foundation of a great cheese but, in the end, its transformed from milk into cheese by the cheesemonger's craftsmanship - at the moment I love the excellent Cowgirl Creamery's pasteurized cheese Red Hawk Creamey's Red Hawk. The "raw milk" debate is more of a symbol of the battle between the maker whose entire process has integrity and is deeply connected to community and the environment rather than the commercial objectives of the wider food industry.
